Easy make ahead: Mediterranean Turkey Bites

So at first I was worried that the photo wouldn't do these delicious little things justice because of the lighting, but I think it came out okay! I made these in the beginning of the week, and they lasted me until the weekend. I ate them with spaghetti squash, on top of salad and even alone with some parmesan cheese. They were so flavorful and so so so easy. Try these! This recipie was adapted from Chocolate broccoli. You can find the original Here.

Ingredients
  • 1 pound (16-ounces) ground chicken (or turkey) breast
  • 4 cloves garlic, minced
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup crumbled Feta cheese, pasturized (i.e. Athenos)
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup chopped sundried tomatoes, packed without oil (i.e, Bella Sun Luci or California Sundry)
  • Half a Chopped onion
  • The zest of one fresh lemon
  • 1 egg, beaten
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper pepper
  • Canola cooking spray
Instructions
Preheat oven to 425 degrees
In a medium bowl, combine ground chicken, garlic, panko, Feta, spinach, tomatoes, egg, zest, salt and pepper. Roll chicken mixture into 1-inch balls and then place on a foil-lined baking pan coated with cooking spray. Spray cooking spray evenly over meatballs. Roast in the oven 18 minutes or until golden.

Life's A Story...What Does Your's Say?

As I was cruising Pinterest (obviously) I stumbled upon this quote which I really loved, and I thought was appropriate for my life at the moment. I've talked about it before, but the idea of getting a job (BY MAY) is a scary thing! Life truly is  a story. Reflecting back on my four years of college, I cannot believe how the time has flown (and is flying). I've grown so much since freshman year and experienced beautiful ups and of course some downs. I've gotten the chance to see the world, make some fantastic friends, and learn where my passions lie. My story is about to start a new chapter in a few months.  What's your story? Would it be a best seller?

Franco Sarto

Hi everyone!

I recently bought boots from Franco Sarto that I am absolutely obsessed with. I've always wanted half black and half brown boots, I feel like they look fantastic with everything.  I have to say I've definitely been dreaming of spring, but hopefully I'll get to wear these babies quite a bit before the snow starts to melt.
